Summer Chicken Pizza
With just a few ingredients you can make a delicious Low Fat, Low Cal, High Fiber Pizza with a TON of Flavor and only a 1/2 hour of your time (tops)
Western Bagel makes an “Alternative” Pita Bread. With only 110 Cals and a Whopping 8g of Fiber and only .5 grams of fat – this is a Staple in my home.
If you barbecued chicken the night before you’re all set. Just dice up your left-over chicken and fire up your toaster oven or bbq grill and you’re almost done.
1 Cup Diced Chicken Breast
2 Heaping Tablespoons of Low Fat Mozzarella Cheese
2 Tablespoons Trader Joe’s Low Cal, Zero Fat & Low Sodium Marinara sauce
And any of the following:
Red Onion, Diced Yellow and Green Zucchini, or substitute any of these ingredients: Red, Yellow or Green Bell Peppers, Mushrooms, Pineapple tidbits, Diced Green Chiles, Diced Asparagus, Crushed Garlic, Jalapeno’s, Canadian Bacon and Olives.
Spread sauce on the Pita Bread, add cheese and any of your desired toppings above and bake or grill until the cheese is melted.
I personally love doing this on my BBQ pit, but if it’s too hot to be outside I use my Toaster Oven!! Of course, you can use your traditional oven if you don’t have access to the first two … and it only takes as long as you need to melt the cheese.
The great thing is if you have picky eaters in your home you can design each pizza differently to each person’s taste!! This is very filling and is requested just about weekly in my home.
