2014 – A new Beginning
I don’t know about you but for some reason January 1st ALWAYS feels like a new beginning, another chance, a restart and a rejuvenation!! And for me, this year especially, another chance to slim down, get fit and STAY THIN THIS TIME!! In 2012 I reached my weight loss goal, in 2013 I sabotaged it and in 2014 I’m going to fix it and stay that way!! Why oh WHY didn’t I just stay thin and maintain that heavenly goal I reached? Well I don’t know but the entire year of 2013 I beat myself up over it and all that negative talk in my head did me absolutely NO GOOD!
So Goodbye to 2013 and all that negative crap and Hello 2014 where I’m going to get fit “again” and reach my goal “again” and STAY THIN THIS TIME!! Who’s with me?
We got this!! We can do this!!
On the 4th of January I started a 21 day Detox/Cleanse (The Ultimate Reset) and I feel so good. Even though this is the third time I have done this cleanse over the past few years, it feels new and different this time. And each time I wonder why in the world I don’t use the recipes from the plan and continue eating this way permanently. I’m really challenging myself this time to do that. To be consistent!! Which is something I have a huge problem with … consistency for me is like Pulling Teeth or nails on a chalkboard or in my case, a dry paper towel in my mouth. (Does that drive anyone else insane or is it just me)?
So on this journey which I can’t even say what weight I’m starting at because I do not have a scale with me and I haven’t seen a scale in 3 months, but I do know I’m back at 200 lbs. at least (Boy that was hard to admit) I’m going to cherish it, learn from my past mistakes and enjoy getting to that goal one more time!!
Here is one of my favorite recipes on this cleanse … wanted to share it with you because it’s DELISH!!
Southwestern Veggie Taco (1 serving)
1 Serving Black Beans & Rice
1/2 C canned low sodium black beans, drained
1/4 tsp. extra-virgin olive oil
1 dash chili powder
1 dash Cumin
1 dash Smoked Paprika (I find this at Home Goods of all places)
1 tsp. Braggs Liq. Aminos (if you haven’t tried this you MUST – replacement for Soy Sce.)
Pink Himalayan salt to taste (optional)
3/4 cup cooked brown rice (Trader Joe’s organic frozen brwn rice is DELISH)
1/4 Cup corn kernels
Combine all of the above in saucepan and mix well until nice and warm and mixed.
Back to the Taco:
Find the best corn tortilla (thick) you can find, I LOVE these:
these are my favorite!
Place mixture onto the top of your warmed corn tortilla and top with Pico De Gallo and 1/4 of an Avocado and YUM!! Enjoy!!
Now, it’s one HUGE Taco so I eat the top with a fork and when it becomes a manageable size I pick it up and eat it like a taco
