Southwestern Sandwich Spread

We used the small Magic Bullett Blender Cup to make this in.

 

1 Cup Fat Free Plain Greek Yogurt (strained*)

1.5 Tsp Cumin

1 Tsp Paprika

Pinch of Sea Salt

1 Tsp Garlic Powder (or fresh crushed garlic)

2 Pcs. Sun Dried Tomatoes (in pouch, not in oil – I  get these at Greenfrog or Lassens)

Blend just until mixed well … don’t over-blend or it will get too thin.

This is great as a dip or spread on any sandwich or taco  :)

*To strain your greek yogurt:  Put a coffee filter, cheese cloth or papertowel in a large mesh strainer.  Add yogurt and place strainer in a bowl and allow to sit in fridge overnight.  Next day, you can use the drippings in your smoothie … or toss out.  Your yogurt will be nice and thick and ready for spreads and dips.  :)
