Wonderful recipe for the Vegetarian in the family ... so versatile you can add nuts, other veggies or just about anything!! If you want to make it creamy add some Non Fat Plain Greek Yogurt!!
I needed something to serve to our house guest that is low carb... so this was GREAT with the lettuce instead of a tortilla or bread. It was also very filling and delicious!! As I was cooking my daughter said "Mom, it smells just like PF Changs in here" ... Nice, I thought, since I was trying to re-create a dish they are famous for :)
