Chicken in Creamy Mushroom Sauce
This is a recipe I made for my husband’s P90X meal plan. It was s0 yummy it was gone before I could get a photo. Next time I make this I will add some photos, which I think will be soon.
This recipe is for one serving, so if you want 2, 3 or 4 servings, just double, triple, etc. the ingredients.
7 oz. Chicken Breast (boneless, skinless)
1/8 tsp Black pepper
1.5 TBS light, low-fat butter
1/3 cup fat free, low sodium chicken broth
1/4 cup mushrooms, sliced
1 TBS lemon juice
1 TBS green onion, chopped
2 TBS Fat Free Plain Greek Yogurt
Cube chicken in bite size pieces.
Brown chicken breast in the light butter till golden brown but not cooked through. Add mushrooms,broth and lemon juice. Bring to a boil and reduce heat to a simmer. Cover and cook 15-20 mins or until chicken is tender and done. Add chopped onions and sour cream and cook a few mins. more until hot.
NOTE: if you want much less fat then replace the light butter with Canola cooking spray and that will be reduce by about 10 g of fat.
