Veggie Quinoa Salad

So Much Flavor and So Versatile ... I want to try Pine Nuts in it next time!!
  • 1 Cup Quinoa (dry) prepare and cool
  • ½ White Sweet Onion or 2 Stalks Green Onion
  • ½ Green Bell Pepper
  • 1 Jalapeno (deveined and seeded for mild)
  • 1 Roma tomato
  • 7 oz white corn
  • 7 oz. whole black beans drained
  • 1 TBS Lime Juice
  • ¼ tsp salt (to taste)
  • ¼ tsp pepper (to taste)
  • ¼ tsp garlic salt
  • ½ tsp Cumin
  • 2 TBS Olive Oil (enough to slightly moisten) maybe 3 TBS.
  1. Cook 1 Cup of Quinoa and set aside.
  2. Finely dice all Veggies and add to Quinoa
  3. Add seasonings and stir ... add Olive Oil until everything is nicely coated.
  4. Serve and eat right then or even better when chilled.
  5. Hint: If you cook your Quinoa ahead of time and chill it you can add veggies, toss and serve chilled. Stores well in fridge and even better the next day!!
