Lettuce Wraps

I saw a picture of these today on a website and hunted down the recipe.  I can never leave anything alone, let alone accept the fat and calories in traditional recipes so I tweeked it and made it my own :))

Chicken Lettuce Wraps (and Turkey)

4 Carrots

3 Celery Stalks

1 Red Bell Pepper

3 cloves Garlic

3 Green onions (entire thing)

1/2 tsp. Sea Salt

1 tsp. parsley flakes

Dice the above and saute in Cooking Spray until the carrots begin to soften.

And now for the meat…

1 pkg. (1 lb.) Ground Chicken and 1 pkg. (1.5 lbs.) Ground Turkey 99%/Extra Lean

1 Cup Water

2 TBS Dehydrated onion

Pepper (to taste)
Onion Powder (to taste)1/2 Tsp. Garlic Seasoning (has salt and pepper )

1 TBS. Reduced Sodium Soy Sauce

2 Tsp. Ginger (Powder) if you have fresh then grate it into your veggie mixture

With a Food Grade Glove mash your chicken and turkey together to completely blend together, also incorporating all the seasonings.  Take your Veggie mixture and spread it to the outside of your pan all the way around to make a hole in the center of the pan.  Spray the empty space with cooking spray.  Put turkey/chicken mixture in the center of the pan and begin cooking and stirring it, make  a well and pour in the water.  As it cooks begin to incorporate it into the veggies.  Continue cooking, adding more water if you need to so it doesn’t scorch.  I also add more spray if needed.  Once the meat is no longer pink turn the fire down and let it simmer and fully stir in vegetables.

Add the following:

2 TBS Reduced Sodium Soy Sauce

1/2 Can Sweet N’ Sour Sauce (aprx. 1/2 to 3/4 Cup)

2 Tsp. Chile Paste (heaping)

3 TBS  White Rice Vinegar

1/4 Cup Pumpkins Seeds

1 TBS Dried Cilantro Flakes

At this point I simmered on lowest setting while I set the table and served.

Wash your favorite lettuce (I used Green Leaf Lettuce) and leave in whole leaves, pat dry.

Great served with Brown Steamed Rice.

    I love Lettuce wraps. My family and I have celiacs disease and we wrap everything in lettuce!!! Thanks for the recipe. Ill give it a try.
